Madras Egg Curry Masala

Humpty Dumpty didn’t fall for nothing! On this episode, Chef Sam serves up his favorite egg curry masala recipe inspired by his time in Madras.

Ingredients: 

  • 3 Raw or Boiled Eggs
  • 5 Crushed Curry Leaves
  • 1 tbsp Cumin Seeds
  • 1 tbsp Mustard Seeds
  • 2 tbsp Egg Curry Masala
  • 1 Green Chili
  • 2 tbsp Tomato Puree
  • 5 tbsp Curry Base
  • 1 tsp Asafetida
  • Salt to Taste
  • 6 tbsp Coconut Milk
  • 3 tbsp Cooking Oil
  • Water
  • Cilantro

Steps (stir between each step): 

  1. Add oil to preheated pan
  2. Add cumin & mustard seeds
  3. Add asafetida
  4. Add curry leaves
  5. Add Sam's curry base
  6. Mix well
  7. Add egg curry masala
  8. Add water
  9. Add tomato puree
  10. Add more water
  11. Add salt (to taste)
  12. Chop and add green chili
  13. Add coconut milk
  14. Add raw or boiled eggs
  15. Simmer until eggs become solid

And...Done! Garnish will cilantro and serve with basmati rice, naan, or roti.
