Malabar Fish Curry | Kerala Style

Bold, beautiful chunks of king fish floating atop a delectable sea of coconut and spices. On this episode, Chef Sam takes us to the tropical coastlines of Kerala to bring us his take on Malabar Fish Curry.

  • 2-3 King Fish Fillets
  • 1 tbsp Cumin Seeds
  • 1 tbsp Mustard Seeds
  • 1 tbsp Crushed Ginger
  • 5 Crushed Curry leaves
  • 2 Dried Red Chilies
  • 1 Green Chili
  • 1 tbsp Fish Masala
  • 5 tbsp Curry Base
  • 2 tbsp Tomato Puree
  • 5 tbsp Tamarind Paste
  • 8 tbsp Coconut Milk
  • 1 tbsp Heavy Cream
  • 3 tbsp Cooking Oil
  • Water
  • Salt to Taste
  • Cilantro

Steps (stir between each step): 

  1. Chop green chili
  2. Remove skin of fish and cut into pieces
  3. Add oil to preheated pan
  4. Add cumin and mustard seeds
  5. Add dried red chili
  6. Add chopped green chili
  7. Add crushed ginger
  8. Add Sam's curry base
  9. Add curry leaves
  10. Add fish masala
  11. Add water & mix well
  12. Add tamarind paste
  13. Add tomato puree
  14. Add salt (to taste)
  15. Add a bit more water
  16. Add raw king fish pieces
  17. Add coconut milk
  18. Add heavy cream
  19. Simmer on medium heat (10-12 mins)

And... The dish is complete! Garnish with cilantro and serve with rice, naan, or roti.
