Name of Dish: Chicken Curry with Chopped Onions & Tomatoes

Serves: 4-6 people

What to serve with: Basmati rice (white or brown), chapatti, or ciabatta bread 


  • 3 tbsp. vegetable oil
  • 6 green cardamom pods, crushed lightly
  • 1 stick cinnamon
  • 5 fresh chopped green chili peppers
  • 1 tsp minced garlic
  • 1 tbsp. minced ginger
  • 1.5 chopped cups of tomatoes
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp. coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1 tsp dried fenugreek leaves
  • ¼ tsp turmeric powder
  • ¼ tsp paprika powder
  • 1 tsp salt, or to taste
  • ½ plain yogurt, whisked until smooth
  • 3 pounds whole chicken cut into bite-sized pieces
  • 1 cup water


How to Make This Recipe:

  1. Heat oil in saucepan over medium-high heat and cook cardamom, cinnamon, green chili for about 1 minute
  2. Add onions and cook over medium-heat until reaches medium-brown for 7 minutes
  3. Add ginger and garlic, sauté for 3 minutes (done so that raw flavor disappears)
  4. Add tomato, cook for 5 minutes or until everything blends (you will notice shine on top of curry)
  5. Mix in coriander, cumin, garam masala, fenugreek leaves, turmeric, paprika, and salt. Add yogurt a little at time to prevent curdling until everything’s infused. About 1 minute.
  6. Add chicken and water. Cover the pan and cook over high-heat for 5 minutes. Then reduce heat and cook on medium for 10 minutes while constantly stirring.
  7. Dish is done when chicken is tender. Transfer to serving dish and garnish with cilantro.
